Aging: 5 months in 13% new French oak, finished for 3 months in stainless steel
Optimal Drinkability: Drink now through 2021 (Released May 2019)
Tasting Notes: Kaffir lime, pineapple juice and fresh whipped cream on the nose, with persimmon, honey and a savory finish of spices and dried fruits.
Pairing Suggestions: Seared scallops with brown butter. Thai and Vietnamese shrimp dishes. Double and triple cream cheeses, such as Cowgirl Creamery’s Mt. Tam.
